Grilled Zucchini
I'm always inspired to fire up the grill when spring finally arrives, and grilling is a great way to enhance the taste and texture of vegetables. This grilled zucchini recipe is quick, easy and delicious!
Brian’s Grilled Zucchini
Ingredients:
• 4 medium zucchini (two yellow and two green)
• ¼ cup red wine vinegar
• 1 tsp black olive paste
• 1 tsp dried oregano
• 1 tsp chili flakes
• ¾ cup extra virgin olive oil
• 1 cup fresh ricotta
• 1 Tbsp cracked black pepper
• 2 jalapeños, sliced thinly
• 1 bunch fresh mint
Method:
1) Pre-heat grill
2) Using a mandoline or other vegetable slicer, slice zucchini lengthwise into 1/8 inch-thick slices, reserve
3) In a bowl, whisk together the vinegar, olive paste, oregano, chili flakes and ½ cup olive oil to form a loose vinaigrette
4) Dip zucchini in vinaigrette and drain off excess, then place the slices on a cookie sheet
5) Working in batches, grill over medium flame and place on a large platter
6) In a small bowl, combine the ricotta with the remaining olive oil and black pepper
7) Place in the center of the platter with the zucchini and drizzle with the remaining vinaigrette
8) Sprinkle with sliced jalapeños and mint leaves
This makes an excellent side dish for grilled tuna steaks.
