Wild Rice Pilaf

Wild Rice Vegetable Mix

Ingredients
Red pepper, seeded & small diced            ½ cup
Red onion, peeled & small diced            ½ cup
Corn, blanched                    ½ cup
Dates, medium dice                    ½ cup
Dried cranberries                    ½ cup

Wild Rice Pilaf

Ingredients
Rice mix, cooked                    1.5 cups
Vegetable mix                        2/3 cup
Chicken stock                        4 oz
Butter                            1 tbsp
Almonds, sliced and toasted                2 tbsp
Parsley, rough chop                    1 tbsp
Salt                            A/N
Black pepper, fresh ground                1 crank

Garnish
Almonds, sliced and toasted                1 tbsp
Parsley, rough chop                    1 tbsp

Procedure
1. In a sauté pan, place rice, vegetable mix, stock and butter. Cook on medium heat until hot throughout
2. Add almonds, parsley, and season with salt and pepper. Taste and adjust.
3. Place in dish and garnish with almonds and parsley.
